12 Corn Tortillas

1/2 c Reduced Fat Mexican Cheese

Here is how you make Turkey and Black Bean Enchilada Casserole:

Cook turkey breast (poach, grill, roast) and chop. Combine with next 4 ingredients. Heat 1/2 can enchilada sauce in skillet. Soften tortillas by placing in sauce briefly but remove before they fall apart. Spray cooking spray into a lasagna size pan. Place six softened tortillas in one layer and add turkey mixture on top. Pour one can of enchilada sauce on top and then place remaining tortillas on top. Cover and bake at 350 for 45 mins or until bubbly.
