1 lb of ground turkey or lean ground beef
salt and pepper to taste
1/2 teas of celery seed
1 1/2 teas of parsley flakes
1 large can of mushrooms, drained
12 oz can of diced tomatoes,drained (use fire roasted if you can find them)
Brown or white rice prepared.

Here is how you make Zucchini and Ground Turkey (or Beef):

Saute zucchini in a little extra virgin olive oil until tender crisp. Remove from pan. In same pan saute onion and garlic, season with salt and pepper. Remove from pan. Brown the meat in the pan and drain fat. Add tomato sauce, celery seeds, and parsley. Season with pepper and about 1//2 teaspoon of salt. Simmer for 5 minutes. Add the drained mushrooms and cook 5 more minutes. Add the diced tomatoes along with the zucchini, onion and garlic. Cook 5 minutes to heat through. Serve over rice. Serving Size: 6 to 8 servings.
