Here is how you make Italian Turkey w/Broccoli, Tomatoes and Mushrooms w/Roasted Parmesan Spaghetti Squash:

-Cut spaghetti squash in half, scoop out seeds, place in a roasting pan with 1 and 1/2 cups water and roast in oven at 375 degrees for 35 to 40 minutes. Allow to cool enough to handle and then scoop out squash strands and place in mixing bowl. Add butter, parmesan, salt and pepper. Toss to combine. Brown turkey in non-stick pan. Once turkey is browned add oregano, garlic, onions and tomatoes. Saut? for 7 minutes. Add broccoli and mushrooms and saut? for another 5 minutes. Place spaghetti squash mixture in bowls then top with turkey mixture, garnish with chopped frash basil and serve.
