Add the ginger, scallions and garlic. Stir until fragrant, about 30 seconds. Add red pepper flakes and orange zest. Cook 20 seconds longer.Place turkey strips in the pan and cook until lightly browned, about 2-4 minutes.Add the broccoli and bell pepper. Heat, stirring, until soft but still crunchy (about 1 minute)Pour in soy sauce, vinegar and beer. Bring to a boil, stirring constantly. Mix together the spelt flour and water and add to the mixture in the pan. Stir and cook until thick, about 15 minutes. Remove from heat and let stand for about 1 minute before serving.Serve over rice or udon noodles.
