Use Make Ahead Mushroom Sauce recipe. [nutrition is calculated into this recipe.] Use left-over, cooked turkey or chicken white meat. Recipe is my adaptation of recipe on p. 33 of OAMC by M.Wilson & M.Lagerborg. Changed to increase the broccoli, and decrease the sodium from condensed soup, & decrease calories. I do not use the mayo in original recipe. Freezes well. Thaw in refrigerator 24 hours. Serve with Cranberry Salad and a starchy option of choice [whole grain rice or whole grain bread.]

The ingredients for Turkey Broccoli are:

1/4 of total amount of Mushroom Sauce for Make Ahead Casserole recipe.
1/4 tsp Curry Powder
[optional to add more canned mushrooms]
10 oz [or more] package of frozen, chopped broccoli. DO NOT THAW.
6 oz Turkey or Chicken Breast, diced
1/3 cup Parmesan Cheese.
Canola Spray
Foil


How Do I Make Turkey Broccoli?

Here is how you make Turkey Broccoli:

Measure the cooled Mushroom Sauce mixture into a bowl. Add the curry powder to taste. Stir well. Stir in the diced, pre-cooked poultry. Stir in the broccoli. I line a 9X9 pyrex casserole with aluminum foil. Spray with Canola Spray. Add the mixture. Sprinkle the Parmesan on top. Cover & freeze. When frozen solid, Remove the foil packet from the Pyrex casserole. Over wrap it or put in a zip-lock bag. Label with directions for preparation.Thaw in refrigerator for 24 hours. May remove the foil & place in casserole that has been prepared with Canola spray. Preheat oven to 350 degrees. Bake covered for 40 minutes. Remove foil, stir to bring colder food in center to the outside. Bake additional 20 minutes. [Check to see if it is getting done faster. Needs to be heated through to serving temperature.
