Soak planks in beer or water for at least one hour. Prepare grill for direct cooking over medium heat (350-450 degrees)2. In medium bowl, combine ketchup, Worcestershire, soy sauce, vinegar, sugar, mustard, cumin and hot sauce. Reserve 1/2 cup sauce to serve with burgers.3. In large bowl, gently mix turkey, oats, shallot, salt and pepper: form into 6 patties, each about 3/4 inch thick. With thumb or back of spoon, make shallow indentation about 1" wide in center of each patty so centers are about 1/2" thick. (This helps patties cook evenly and prevents them from puffing on grill.)4. Drain planks: heat over direct heat, with lid closed, until they begin to char and lightly smoke, 5-10 minutes. Turn planks over; place 3 patties on each plank. Grill burgers over direct heat, with lid closed as much as possible until no longer pink in centers, 15-20 minutes, turning and basting with sauce once after 10 minutes.5. During last minute of cooking time, lightly toast cut sides of bus over direct heat.
