There is nothing special about the ratio, white rice can be used instead. Wash the rice, and add cold water to the pot. For brown rice recommendation is 2 cups of water for 1 cup of rice. Bring to a boil and let it simmer for 10 minutes. If using white rice cut the time in half. General idea is to cook it about half or 3/4 of the way, but not all the way.Once the Wok is hot add half a tablespoon of oil. I used sesame oil. Add a tea spoon of ginger paste, and a teaspoon of garlic paste. Swirl around and mix them together. Add chopped onion, and stir fry until it becomes soft. If it starts to burn or gets too dry add a splash of chicken stock.Once the onions are done add the mushrooms. Basically entire package. Mix onions and mushrooms together and stir fry until mushrooms release the juices and then most of it gets cooked out. By that point mushrooms should be soft.Move the mixture to the sides of the wok, and in the middle add the ground turkey. Start stir frying it, and slowly add the onion/mushroom mixture from the sides. Continue to stir fry mixing everything together. Ground turkey will release a lot of juice. Stir fry until most of it is cooked out. At that point add tbs of Light soy sauce and half a tbs of fish sauce, and about 1-2 teaspoons of freshly ground black pepper stir everything together and cook for a minute, then add the Green Chile. A quick note use high quality LIGHT soy sauce. It makes all the difference. Light does not mean reduced sodium, it refers to the flavor. Google it. Do not over cook the turkey, you still want it to be moist and some juice remaining in the wok. Turn off the heat and add the rice in. Mix everything together, and transfer in to casserole dish. In a bowl beat 6 eggs together, add a dash of pepper, and pour on top of the mixture. Grate some Cheddar Cheese on top, and put in to the oven which was preheated to around 350 F. Cook for 40 minutes. For first 30 cover the top with foil to prevent cheese from burning.
