Brown the turkey in a skillet; drain fat and set meat aside. Add olive oil and butter to skillet; saute onions, garlic, peppers and mushrooms over low heat until mushrooms are lightly browned. Sprinkle with salt and pepper to taste. Add meat and tomato sauce. Set aside. Cook egg noodles according to package directions. Mix together the cream cheese, sour cream, cottage cheese and poppy seeds; toss with hot, drained egg noodles and mix well.
