1 ounce cheddar cheese, low-fat
2 tablespoons sour cream, fat-free

When nearly cooked through, add remaining 1 tsp. of oil and the chopped onion and green pepper; sauté until tender. 4. Add tomatoes, kidney beans (undrained), corn, jalapenos (chopped), chili powder, and Cajun spice; stir to combine. 5. Cover and reduce heat to low and simmer for 30 minutes, stirring occasionally and adding water if necessary to maintain stew consistency. 6. Garnish with shredded cheese and sour cream.
