Add oil to a skillet over med-high heat.While skillet is heating top cutlet with one slice of proscuitto. Dredge both sides of the cutlet into in the flour and cheese mixture. Repeat with remaining cutlets.Place cutlets into the skillet, proscuitto side down. Cook for approximately 5 minutes or until golden brown. Turn cutlets and cook an additional 5-6 minutes.Transfer cutlets to a serving plate and cover with foil.In the skillet place butter and stock. Stir stock and butter being sure to loosen any browned bits that may be on the bottom of skillet. Continue stirring until butter is melted and sauce comes to a boil.
