In a 12 + quart pot, heat the oil on medium-low heat and sautee the onions, red bell peppers, spices, stirring occasionally until onion begins to brown, about 10 minutes. Turn the heat to medium high, add half the turkey, breaking it up, and cook until it's browned, stirring occasionally. Add the tomatoes, beans, broth, and salt. Bring to a boil, stirring frequently, then simmer uncovered for 45 minutes, stirring occasionally. Pinch off teaspoon-size pieces of the remaining turkey and add to chili. Simmer another 30+ minutes, stirring occasionally, until turkey is tender and chili is somewhat thickened.
