2 small shollots, chopped
1 cup dry white wine
2 cups low sodium, fat free chicken broth
2 Tbls chopped fresh parsley

Mix poultry seasoning with flour. Season lightly with kosher sald and black pepper. dredge turkey cutlets through flour mix. Shake off Excess flour.Heat 1 1/2 Tbls olive oil in pan, saute turkey cutlets until lightly browned. Add more olive oil to pain if needed. Hold cutlets warm.Add shallots and mushrooms to pan. Cook 5 Minutes. Add dry white wine. Increse heat and reduce wine by half. Add chicken broth and reduce by half.Mix 1 Tbls flour with 1 Tbls water until a smooth paste. Add to broth for a thicker pan sauce.Return Cutlets to sauce to bring back to heat. Plate Cutlets.
