1. Roughly cube eggplant (half inch squares), sprinkle lightly with salt and place in colander to drain for 30 minutes. This removes any bitterness the eggplant may have.2. After eggplant has drained, place the ground turkey onto a hot skillet over medium heat. Stir the turkey around until some juices have formed and it is halfway done. 3. Add eggplant cubes and stir to thoroughly combine the meat and veggies. Sprinkle in the rest of the seasonings.
