4 slices thinly sliced prosciutto ham
4 slices hot capicolli
16 leaves fresh basil or 8 leaves fresh sage
2 tbsp butter
2 tbsp extra virgin olive oil
1/2 c cooking sherry or red wine
2 tbsp capers (optional)
Fresh ground sea salt and pepper
