Toss these in the crockpot with some red sauce before you go to work in the morning, come home, add some whole grain pasta and a salad... YUMMY!! Mix very well. Cover and let sit in fridge for at least an hour, preferably overnight. Make small 1-1/2 inch meatballs (I used my cookie dough scoop and got about 27) and brown slightly in nonstick pan sprayed with olive oil. You can turn the heat down to low, cover and let get done all the way through (they do freeze really well) or slightly brown on the outside and toss them in a crockpot with a jar of red sauce and a can of diced tomatoes before work in the morning. After simmering in the sauce all day, they are wonderful with a little whole grain pasta and a small salad!
