I am addicted to ordering lettuce cups when I go out to eat - I think because they are low carb, high protein that they are one of the best options - plus they are delish! In actuality, they are probably not very healthy from a restaurant - considering they probably use a lot more oil, high sodium sauces and who knows how lean the meat is - some restaurants have more fat (saturated) and calories in their turkey burgers than their beef burgers! I decided to try this at home so I know exactly what's going in it! What Are The Ingredients For Turkey Lettuce Cups Recipe?

The ingredients for Turkey Lettuce Cups are:

2 Cloves Garlic
1/4 Onion (I use Vidalia onions) Chopped
1 Lb. 93% Lean Ground Turkey (or any ground meat you desire - Turkey is figured into the nutritional value)
1/2 Cup Water Chestnuts (Optional, but figured in to the nutritional value)
1 Cup Carrots, strips or slices
1/2 Cup Green Onion/Scallions
2 TBSP Low Sodium Soy Sauce
6 Lime Wedges
Olive Oil (Just enough to sautee the garlic & onion. 2 TBSP figured into the nutritional value)
Tapatio (any hot sauce of your liking - if you don't like hot/spicy, try teriyaki sauce or omit)
8 (Approximate) Lettuce leaves (I use Iceburg for the crunch)
Cilantro
*Optional - Ginger (fresh or powdered)


How Do I Make Turkey Lettuce Cups?

Here is how you make Turkey Lettuce Cups:

Heat olive oil in a pan, just enough to get a little sizzle in the garlic and onionAdd chopped/minced/diced/pressed Garlic and chopped Onion Let the Garlic brown slightly and the Onion turn opaque (*NOTE - If using fresh Ginger, add to the pan just before adding the meat to let it cook down slightly to get the flavor goin')Add 1lb. of Ground Turkey (or meat of your choice) and cook thoroughlyYou may add a dash of salt & pepper or seasoning salt (I save my sodium for a little soy sauce) or, if you're using Ground Ginger, sprinkle a little on when you add the meat*While the meat is cooking, you can slice the lime, green onion, carrots, water chestnuts (optional) and prep the lettuceOPTIONAL - When the meat is done, I drain the little bit of liquid that is in the pan, but this is not necessary if using extra lean meat (plus, truth be told, the little bit of liquid will mean less sauce at the end, saving some sodium. I drain mine so I can add tons of hot sauce and not have a "soupy" mixture)When the meat is done turn the stove on low and add the carrots, green onion/scallion, water chestnuts (optional), soy sauce and hot sauce.Stir it all together and turn off the stove (I like my carrots and water chestnuts crunchy, but if you don't, add them before the meat is finished cooking)Spoon the mixture into the lettuce cups, top with a spritz of lime and cilantro and ENJOY!Serving Size: Makes 4 servings - calculating 4oz. of turkey as 1 servingNumber of Servings: 4Recipe submitted by SparkPeople user JLLLEW00.
