Here is how you make Dan's Healthier Turkey Loaf:

Wash the pepper and clean out the seeds. Slice the pepper into 1/8" rings. Set three rings aside and chop the rest. Dice the tomatoes, reserving 1/2 cup. Place the remaining tomatoes, peppers, turkey, oats, applesauce, and Italian seasoning in a bowl and mix carefully but thoroughly (working the meat too much makes the meatloaf too dense). Place the meat mixture into a greased loaf pan, pour the reserved tomatoes over the top, and place the three pepper rings over the lot.
