2 cups tomato sauce (set aside 1 cup for topping on loaf)
2 large large eggs
1/4 cup sun dried tomatoes, diced
1/2 cup manzanillas (small green olives stuffed with pimento)
2 lbs 99% fat free ground turkey breast

Here is how you make Mediterranean Turkey Loaf:

1. Preheat the oven to 375 degrees.2. In a large bowl combine all of the ingredients together (remember, only 1 cup of tomato sauce!) except for the turkey. Mix all the ingredients together thoroughly. Then, using your hands, fold in the ground turkey. 3. Spray a 9" by 13" baking pan with non-stick spray and place the meatloaf mix in the pan. Smooth out the loaf so that it is evenly distributed in the pan. Smooth the remain cup of tomato sauce on top.4. Place the turkey loaf in the oven on the center rack and bake at 375 degrees for 45 minutes or until the loaf reaches 165 degrees internal temperature. Cut the loaf into 8 even portions.
