Preheat oven 350 degreesIn large skillet cooke pancetta until crips, remove from skillet and drain on papertowel, removing as much of fat as possible.Cook mushrooms in 1 Tbsp. oil2. For filling, in medium bowl combine pancetta, mushrooms, mozzarella and driet tomatoes. Set aside3. In large bowl,mix eggs,, chicken broth. Add bread crumbs, romano cheese, garlic, italian seasoning. Add turkey and sausage.Mix well with hands.4. On parchment paper, spread turkey so it is 9 X 15 rectangle. Sprinkle filling evenly over meat. Roll meat and place seam side down into15 x 10 x 1 inch pan.5. Bake uncovered for 1 hour or until thermometer reads 160 degrees.6.
