6 cups (1.5 L) baby arugula leaves
1 tsp. (5mL) water
1 cup (250 mL) fresh basil leaves
2 tblsp. (25 mL) fresh cilantro, minced
4 egg whites plus 1 yolk
1 tblsp. (15 mL) tomato paste mixed with 1 tblsp. (15 mL) water
3/4 cup (175 mL) low-sodium chicken or vegetable broth
2.5 pounds (1.1 kg) ground turkey breast (no skin or fat)
3/4 cup (175 mL) oat bran (or substitute oatmeal ground in a blender)
1/4 cup (50 mL) ground flax seeds.

1. Place rack in centre of oven and preheat to 375 deg. F. (190 deg C). Heat olive oil in a non-stick pan and cook onions and celery until translucent but not browned. Season to taste with sal, pepper and transfer to a small bowl to cool.2. Add spinach and arugula to the frypan with 1 tsp. (5 mL) water. Cook until greens are wilted. Remove from heat and let cool. Add basil and cilantro to the wilted greens and mix well.3. In a large bowl, add egg whites, yolk, tomato paste mixutre and broth. Mix well. Add ground turkey, oat bran and flax seeds along with cooked onions and clelery. Spray clean hands with cooking spray and mix the turkey well.4. In a 10-in (25 cm) loaf pan coated with cooking spray, place half of the turkey mixture; spread evenly. Transfer wilted greens and herbs to the loaf pan and distribute evenly on top of the turkey mixture. Now, top with remaining turkey mixture and smooth the surface.5. Bake 1.5 hours, or until a meat thermometer inserted in the centre shows 160 deg. F (71 deg C). Remove from oven, place on a rack and cool 15 minutes to set properly.
