--> Dried Apricots - 4 pieces
--> Egg Beaters (egg substitute) - 1.5 tbsp
--> One medium sized mushroom, sliced
--> Oregano - 1 tsp (more/less to taste)
--> Ketchup - 5 tbsp
--> Yellow Mustard - 0.75 tbsp
--> Brown Sugar - 2 tsp

Here is how you make Apricot Turkey Meatloaf for Two:

Preheat oven to 350.1. Spray baking pan with non-stick spray (I use a 9x13" metal cake pan) lightly.2. Wash hands. Self explanatory, but I had to include it.3. Chop dried apricots into small cube-like pieces, size doesn't particularly matter but I made mine about 2 tic-tacs big (the universal measurement haha). Save apricots for step 6.4. Slice mushroom into thin pieces, cut slices in half to make them smaller. Save for step 6.5. In a separate bowl, combine ketchup, mustard and brown sugar. Mix thoroughly. This will be the glaze, save for step 8.6. In large bowl, combine: Turkey, oatmeal, mushrooms, apricots, oregano, Egg Beaters and any other desired seasonings (add a couple dashes of salt and pepper as well). 7. Use hands to thoroughly mix the ingredients together. Once ingredients are mixed, use hands to tightly pack mixture into a loaf on the surface of the baking dish. I usually aim for my loaf to be about 5 inches wide and 10 inches long. Note: The shorter and flatter the loaf, the faster it will cook, cooking times specified are for my loaf that was approx 1.5 inches at it's tallest point in the center).8. After loaf is formed, spread glaze (ketchup mixture from step 5) onto the top of the loaf. Remember that the glaze will spread slightly as it cooks, so focus mainly on spreading it on the top, it will fall to the sides.9.
