3 lbs. lean ground turkey (a combo of dark & white meat)
1 cup instant oatmeal (about 6 packets)
1 large red pepper, diced into small bits
1 large or extra-large zuchinni, shredded
1 medium carrot, grated
1 medium yellow onion, grated or very finely chopped
2 eggs
1/4 c. roasted garlic marinara sauce
1 1/2 tsp salt
1 tsp freshly ground black pepper

Optional - if you want more of an Italian flavor, add 1 tsp. each of dried oregano and dried basil

Here is how you make Moist 'N Tender Savory Turkey Meatloaf:

Preheat oven to 375 degrees. Place all ingredients in a large bowl and mix thoroughly. The non-meat ingedients should be evenly distributed throughout the ground turkey. Form two meat loaves with your hands and place them in a large, non-stick pan. Pour about 1/4 c. water in the bottom of the pan, cover securely with aluminum foil, and bake for 60 minutes. Remove the foil and bake an additional 15 minutes to brown the top of the loaves. If you wish, spread 2 Tbsp. of roasted garlic marinara sauce on top of each loaf during the final 15 minutes of baking.
