1 envelope plain unflavored gelatin powder
1 pkg (10 oz) frozen spinach (* See note)
1 pkg (14 oz) tofu
1 medium-large onion
1 tbsp salt
1/2 tbsp thyme, fresh or dried
1/2 tbsp sage, fresh or powdered
1 1/4 cup oat bran
1 1/2 lb ground turkey
12 oz pork sausage (can substitute 12 more oz of ground turkey to make this even lower-cal and lower-fat)


How Do I Make Super-Healthy Turkey Meatloaf?

Here is how you make Super-Healthy Turkey Meatloaf:

(Instructions call for using a food processor, but you can do this in a mixing bowl by hand if you prefer.)1. In the bowl of a food processor, crack two eggs. Sprinkle gelatin powder over them and then let stand for 5-10 minutes to let the gelatin absorb.2. Meanwhile, defrost frozen spinach in the microwave, then squeeze out as much water as you can from it.3. Add spinach to food processor, along with tofu, onion, salt, thyme, and sage. Process until no chunks remain.4. Pour spinach mixture into large mixing bowl. Mix in oat bran, and let stand about 10 minutes, to allow the oat bran to absorb liquid.5. Add ground turkey and sausage (if using sausage) and mix well by hand until well blended.6. Form into loaf shape on rimmed baking sheet. Bake at 350 F until internal temperature reaches 160F, about 1.5 hours. Makes approximately 10 slicesNOTE ON INGREDIENTS:The spinach adds a lot of nutrients and some good flavor to the meatloaf. However, it can also give it a slight greenish tinge.
