Dice all veg as small as you like it in a meat loaf.2. fry together the mushrooms, celery, garlic, herbs/salt /pepper etc together in cooking spray for 5 mins. 3. Set aside on a plate and allow to cool for 5-10 mins.4. Combine turkey mince, eggs and cooked veg in a bowl. 5. Place mixture in a nice loaf tin or pie dish. 6. Cook for 50 mins until golden brown on top. Cook at 190 degrees Celsius, on the middle shelf of your oven.
