1 c. chopped onions
1.5 tsp. minced garlic
1 pound ground turkey
2 cans (7oz each) of sliced mushrooms or pieces drained (8 oz. drained weight of two cans)
4 Italian Tomatoes chopped
1 TBSP dried parsley
1.5 tsp. Basil
1 tsp Cinnamon
3 oz Tomato Paste
.3/4 cup beef broth
2 medium eggplant about 1 to 1.25 each, unpeeled
5 TBSP shredded Parmesan Cheese

Here is how you make Anni's Moussaka with Ground Turkey:

4 large servings. Preheat oven to 350.Slice the eggplant very thin cross wise and set asidechop the onions.chop the tomatoesDrain the cans of mushrooms and chop finely.Spray large skillet with the cooking spray and saute onions and garlic, add the turkey to the onion and garlic, crumble and brown, drain fat from the pan.Add the mushrooms, chopped tomatoes, parsley, basil and cinnamon. stir well to mix.Add the tomato paste and beef broth, stir and simmer 10 minutes.Spray 9X13" baking dish/pan with cooking spray.You will have 2 layers if using 2 eggplants, 3 layers if using 3 eggplants.Layer in this order:1/2 the eggplant (or 1/3)1/2 (or 1/3) the tomato/turkey mixture1/2 (or 1/3) the parmesan cheeseCover the pan with aluminum foil and bake 60 to 90 minutes until the eggplant is tender.
