Saute celery and onions in butter to soften. Add peas mushroom, and turkey. Heat through. Add chicken broth, cooking sherry and sage till simmering. In a separate bowl mix the cornstarch into the milk till dissolved. Then stir the milk/cornstarch mixture into the pan, stirring for a few minutes. Stir in parmesan cheese to finish thickening.
