I found this recipe in a cooking magazine and changed it up to be a little healthier. I used 1% milk instead of half-and-half and fat-free ricotta. I also used healthier pasta and added smoked turkey sausage and it is fantastic!!! My husband and I really enjoy this dish and I hope you do too!!!

1 cup chopped yellow onions
1 1/2 cup fat-free ricotta cheese
1 1/2 cup 1% milk
Pinch of nutmeg
1 box (14.5 oz) of Ronzoni Smart Taste Rotini
4 tbsp fresh shredded parmesan
One package Jennie-O Lean Smoked Turkey Sausage, chopped

Here is how you make Spinach and Ricotta Pasta with Smoked Turkey Sausage:

1. Bring a large pot of water to a boil; add about 1 tablespoon salt.2. Stack several leaves of spinach at a time and cut them into 1/4 inch strips. You should have about 8 packed cups of shredded spinach.3. In a large pan, heat the olive oil over medium-high heat. Add the onions and garlic, stirring until softened, about 5 minutes. Stir in the spinach and chopped sausage. Cover and steam the spinach until it's wilted but still bright green, about 5-10 minutes, stirring as needed to cook the spinach evenly.4. In a small bowl, stir the ricotta, milk and nutmeg until smooth. Add to the spinach mixture and season with salt and pepper. Reduce heat to medium low and simmer for about 5 minutes.5. Meanwhile, cook the pasta until al dente, about 12 minutes.6. Reserve 1/2 cup of the pasta cooking water. Drain the pasta and return to pot. Add the reserved water, the spinach mixture and the parmesan cheese. Stir to coat the pasta.
