2 14.5 oz cans diced tomatoes in juice
2 cups fresh spinach
1/2 cup chopped onion
1/2 cup diced celery
1/2 cup corn
2 tsp minced garlic
1 tsp dried oregano
1 tsp dried rosemary
1 tsp dried basil
1 tsp ground sage
Pepper to desire
1.5 cups cooked rice
1/2 cup fat-free shredded mozzarella

Here is how you make Herbed Turkey Rainbow Bell Pepper Stuffing:

In a large skillet, blanch peppers for about 3 minutes in boiling water. Drain and rinse. Set aside. In large, non-stick skillet slightly season and brown turkey. Remove and set aside.
