4 med potatoes
1/2 head cauliflower (or brocoflower to make the topping green)
2 cups chicken broth
1 tbsp olive oil
1/2 chopped onion
3 shredded or chopped carrots
1 1/2 cups frozen peas
1.5 lbs ground turkey
2 tbsp low sodium worchestershire sauce
salt and pepper to taste


How Do I Make Ground Turkey Shepards Pie?

Here is how you make Ground Turkey Shepards Pie:

Cut the potatoes into small chunks and cut off the cauliflower heads leaving some steam attached to the head. Place the potatoes and cauliflower heads in a pan and fill with the chicken broth. Add enough water to cover all of the potatoes and most of the cauliflower, and then let boil for 20 minutes. Meanwhile heat the oil in a pan, then add the onions and carrots. Cook for about 5 minutes (or until the onions start to soften). Add the ground turkey and cook until all of the pink is gone (about 10 minutes). While the ground turkey is cooking, remove the cooked cauliflower and place in a blender with 1/4 cup of the cooking fluid. Blend well. Drain the potatoes (reserving the cooking fluid), mash, and mix the blended cauliflower with the mashed potatoes. Add enough of the cooking fluid to make the desired consistency, and add salt and pepper to taste. Add the frozen peas and worchestershire sauce to the turkey mixture and cook for another 10 minutes. If the mixture starts getting dry, add the remaining cooking fluid or additional chicken broth to the meat mixture to keep it moist. Spray a baking dish with cooking spray or rub with olive oil. Add the meat mixture to the baking dish and pat even with a spoon. Add the potato mixture on top of the meat mixture, and even out the potato mixture with a fork. Bake at 400 degrees for 25 minutes, and then broil for 5 to 10 minutes, or until the top browns as desired. Number of Servings: 6Recipe submitted by SparkPeople user MRSJARVIS.
