1 onion, chopped
3 T. butter
2 T. flour
2 c. chicken broth (low sodium)
1/2 c. heavy cream
2 c. frozen mixed vegetables, thawed
3 c. stuffing, chilled

Here is how you make Turkey Pot Pie with Stuffing crust:

Saute celery and onion in butter until onion is translucent and celery is soft. Add flour and cook, stirring, for 1 minute. Gradulally add chicken broth, whisking mixture all the while. Add cream, continuing to whisk and let simmer for 5 minutes or until slightly thickened. Add turkey and mixed vegetables. Place into casserole (or can leave it in skillet if you are using an oven proof skillet). Place chilled stuffing between 2 sheets of parchment paper and roll to the size of your pan/casserole. Cut stuffing into wedges and arrange on top of pot pie, completely covering it.
