How Do I Make Turkey Provencal?

Here is how you make Turkey Provencal:

Combine raw turkey with egg, bread crumbs, salt, thyme, and cayenne. Form into 8 patties. Heat olive oil in skillet and fry patties on high heat for 3-4 minutes on each side. Remove from heat. Reduce heat to medium. Add onion to pan drippings and sweat for 3-4 minutes till golden. Add tomatoes, zucchini,a dash of garlic is optional. Cover and cook about 10-15 minutes just until zucchini is tender. Stir inpotatoes and parsley. Add turkey patties and spoon some vegetable mixture over them.
