Add oil to a large non stick skillet and heat on medium. Add onions, peppers and garlic and fry until onions are translucent and lightly browned. Add turkey and continue to cook, breaking up turkey. Add undrained tomatoes, beer and quinoa and stir to combine. Bring to a boil, then cover and cook on low 15 minutes.
