How Do I Make Turkey and Rice Stuffed Peppers?

Here is how you make Turkey and Rice Stuffed Peppers:

Preheat oven to 400. Cut peppers in halve lengthwise. (I cook the peppers flat on their backs, but these can be cooked the traditional way of standing up with tops cut off.) Place peppers on a cooking sheet sprayed with Pam. Saute 1/2 c. chopped onions, minced garlic cloves and mushrooms in a saute pan until onions are soft and browned.Lightly beat egg in a separate bowl and set aside. Mix rice (already cooked), 1/2 can of tomatoes (about 3/4 c.), 1/2 of the cheese (so about .25 c.), raw ground turkey, chopped turkey bacon (raw), beaten egg, and all seasonings that you want to use. (See the Intro for spices I used.) Mix together - but not too long or it will toughen the meat. Stuff the peppers with an equal amount of stuffing. Divide the remaining 1/2 can of tomatoes evenly over the peppers. Cover with foil and bake in over for 45 minutes. Uncover, divide remaining 1/2 cup or parmesan cheese evenly over the peppers.
