1 lb ground turkey
2 cups shredded cheese
1 small onion, chopped
4 garlic cloves
4 tablespoons tomato paste
1 egg (or quarter cup egg substitute)
Olive Oil
Oregano, Salt and Pepper to taste

Here is how you make Turkey, Rice and Cheese stuffed Bell Peppers:

1. Cook rice, you will need 2 cups cooked. Left-over white rice also works.2. Preheat oven to 350 degrees. Meanwhile, place a pan of water on the stove top to boil.3. Finely chop the onion and garlic cloves. In a teaspoon of olive oil saute onion and garlic over medium-low heat under translucent.4. While onion is cooking, cut off tops of bell peppers. Clean out any seeds, and cut in half. Add the halved bell peppers to the boiling water and boil for approximately 3 minutes, or until tender. Remove from water and let dry.5. Combine ground turkey, rice, onion, garlic, shredded cheese, tomato paste and egg. Add oregano, salt and pepper to taste. Mix well.6. Stuff bell peppers with turkey/rice mixture.
