About 2 - 3 lbs smoked turkey necks, legs and/or wings
3 bunches of fresh collard greens, well washed, rolled and sliced into thin strips
1 yellow onion cut pole to pole in fairly thin slices
3 cloves finely minced garlic
1/2 cup no salt, no sugar peanut butter - preferably smooth
1/4 cup tomato paste
1 tsp salt (or to taste)
3 Tbsp peanut oil (may substitute oil of choice)

Here is how you make Smoked Turkey and Collard Greens in Peanut Sauce:

Simmer smoked turkey in water to cover for about 30 min while you are preparing the rest of the ingredients.Thoroughly wash collard greens. Take three leaves and lay them on top of one another. Roll them up tightly and slice through the roll to make long thin strips (about 1/4 - 1/2 " wide). Continue until all leaves are chopped. Set aside in a large bowl.Slice the onion pole to pole to make 1/4" half moons. Finely chop the garlic.Heat oil over med/high in a dutch oven or large heavy bottom stock pot. Add onions and fry just until they begin to get brown at the edges. Turn heat to med and add garlic and fry an add'l minute. Add tomato paste, stir and cook another 2 - 3 minutes - oil should still be sizzling a little. Add collard greens and toss with the ingredients in the pan. Add the turkey - if the turkey was smoked with nitrates, discard the broth. If not, keep and cover all of the ingredients in the pan with it. Alternately cover ingredients with water and add the salt.Bring to a boil, turn heat down and simmer for 1 hr 30 min. During last 15 minutes of cooking, add the peanut butter - 1 tbsp at a time - stir thoroughly. Taste and add salt if necessary.
