8 ounces of whole wheat spaghetti (a little more than approx half a box)
1 small eggplant(only need approx 3/4 of the eggplant)
2 Tablespoons of Low fat or no fat low sodium chicken broth
1/2 a medium yellow onion
1/4 cup fresh flat leaf parsley chopped fine
6 tablespoons grated Parmesan cheese
Salt and pepper

1. Roast the egg plant till the skin is blackened and the flesh is cooked. You can use a gas burner over high heat or broil in oven. Takes approximately 10 min, turn as needed.Peel skin off once slightly cooled. Cut up 3/4 of the eggplant and place in a blender.2. Get water for pasta ready. Boil large pot of salted water.3.
