Combine 3 lbs. ground turkey, 2 eggs, 2 tbsp Italian herbs, 1/4 c fresh bread crumbs, dash each salt & pepper. Mix by hand and form into a loaf in an oven casserole dish. Sauce: brown sliced mushrooms in 2 Tbsp butter, remove from pan. In same pan under heat butter and cornstarch over medium heat until pasty. Slowly add low sodium stock while whisking. Add mushrooms and stir until sauce starts to thicken.
