3 tbsp, extra virgin olive oil
4 cups, fresh spinach
1 cup, mushroom
2 tomatoes, med finely chopped (ripe)
1 cup, cherry tomatoes, ripe & chopped
1 cup carrots & red pepper, coarsely chopped
1 oz, dry sherry
2 oz, dry red wine
1 tsp salt
Freshly ground pepper
1-2 tsp dried italian seasoning (Use fresh herbs instead if you have them on hand)

Here is how you make Turkey Pasta Sauce:

Heat 1 tbsp of olive oil in deep skillet and saute the turkey until cooked. Remove. Add 2 tbsps of olive oil, heat. Add onions, leek, and garlic. Cook until translucent. Add sherry. Add spinach, mushrooms, cauliflower & carrots. Cook until soft. Add tomatoes and red wine. Season to taste. Simmer until done.
