1 lb Jennie-O Sweet Italian Turkey Sausage, take out of casing and chop into crumbles.
2 cubanelle peppers chopped small( if not avail, use Hungarian Wax peppers)
1 small red onion chopped small
4 cloves of garlic, minced
salt and pepper to taste
1 can Hunt's Fire Roasted Diced tomatoes (14.5 oz)
1 cup low sodium chicken stock or broth
1 tsp bay leaf dried
1 lb peeled, deveined, fresh or cooked shrimp large
5 basil leaves chopped or 1 Tbsp dried basil
1/4 cup dried parsley or fresh

Serves 4Welcome to substitute bread bowl for rice, I've had it both ways. Less calories with the rice.Prepare jasmine rice per instructions, usually 1 cup rice to 1 1/2 cups water. I use a rice cooker.Heat a large, high sided skillet or dutch oven over medium to medium-high heat with EVOO. Add turkey sausage and crumble and brown for 3-4 minutes. Add peppers and onion and garlic and season with salt and pepper. Cook for 5 minutes so the vegetables begin to soften.Add the can of tomatoes, chicken stock, and bay leaf, stir and bring to a boil. Add Shrimp and cover with a tight fitting lid. Cook for 5 minutes, then uncover, and stir in basil and parsley.
