Defrost spinach and drain excess water. There's no need to squeeze it out.Heat 1 T. oil in a frying pan, add onion and fry on a low heat for 5 minutes. Add thawed spinach and stir until all water has evaporated. Add diced turkey ham.In a large bowl, whisk 5 eggs, salt and pepper to taste. Add the spinach mixture.Heat the remaining 1T oil in the pan, pour in the omelette mixture and fry, at a high heat, stirring a few times to allow the raw egg to reach the pan and set. Using a large flat plate or a flat lid, gently flip the omelette onto the plate and slide back into the pan to cook on the second side. Serve with bagette and salad for a light meal.
