1 T. onion flakes
1/4 tsp season salt
1 tsp ground pepper
2 parsnips, peeled and chopped
4 medium carrots, peeled and chopped
1 small zucchini chopped (about 1 cup)
4 medium potatoes (about 2 cups) peeled and chopped
2 T. fresh basil, chopped fine
1/4 tsp. Thyme
8 cups low fat, low sodium chicken broth (reserve 1 cup)
1/4 + 2 T. cup cornstarch

Dumplings:
2 c. White Whole Wheat flour
1/8 tsp. salt
3 tsp. baking powder
1 T. dried parsley
1/4 c. canola oil
1 c. low fat buttermilk

Here is how you make Turkey Stew and Dumplings:

In large dutch oven, combine the two turkey burgers and brown with the season salt, pepper and onion flakes. after burger is browned add parsnips, carrots, zucchini and potatoes, and 7 cups of the chicken broth, basil and thyme. Simmer until vegetables are nice and tender and flavors have blended.Stir the cornstarch into the remaining cup of broth, whisking smooth. Stir quickly into stew and allow to come to a bubble and thicken.Mix flour, baking powder, salt and parsley in a medium size bowl. Stir in oil and combine until it forms small pea size flour mixture. Stir in buttermilk.Stir stew well and then drop dumpling dough into 8 even spoonfuls over stew. Cook on a low heat (small bubble) for 10 minutes uncovered. Check carefully with a spoon that stew is not sticking to bottom and then cover pot and let simmer again for another 10 minutes.Makes 8 portions of 1 cup of stew and 1 dumpling.Serving Size:?Makes 8 - 1 cup servings plus 1 dumpling
