4 oz. turkey (left overs are fine!)
1/4 cup zucchini - roughly chopped
1/4 cup yellow squash - roughly chopped
1/4 cup carrots - roughly chopped
1/4 cup onions - roughly chopped
1/2 cup brown rice - cooked
2 tbsp. lite or reduced sodium soy sauce
2 tbsp. olive oil for stir fry
Your favorite seasoning blend


How Do I Make Quick Turkey Stir Fry?

Here is how you make Quick Turkey Stir Fry:

Cube your left over turkey meat (or season and cook raw turkey) and heat in a large skillet. Once warm remove turkey from skillet, cover dish and set aside. Chop all of your vegetables and season with your favorite seasoning blend. Add olive oil to hot pan (the hotter the better) and then add all of your seasoned vegetables at once. Cook on high heat until vegetables are tender crisp and just starting to brown up. Add half of the soy sauce and continue cooking for 1minute. Add turkey back to vegetable blend and add remaining soy sauce. Cook for 1 additional minute. Serve the stir fry over cooked brown rice.This is a serving for 1 person, but is easily adaptable for a family.
