4 large bell peppers (shorter and wider work best)
1 cup cooked quinoa
3/4 cup chopped onion
2 cloves garlic, minced
1/2 cup chopped celery
1/2 cup chopped carrots
1/2 frozen spinach, thawed
1 1/2 cups no sugar added pasta sauce
1/2 tsp oregano
1/2 tsp basil
1/4 tsp thyme
1/2 cup part-skim mozzarella cheese (divided)
*Optional: red pepper flake 1/4 tsp - 1/2 tsp

Here is how you make Quinoa and Turkey Stuffed Bell Peppers:

1. Preheat oven to 350 degrees F.2. Remove tops and seeds from peppers. Fill a large pot with about 1 1/2 inches of water and bring to a boil. Carefully place peppers upright in water, reduce heat to low, cover, and simmer about 5-7 minutes until tender crisp.3. Brown meat, onion, and garlic. Set aside. In the same pan, saut? celery, carrots, and spinach until soft. Mix in meat mixture, quinoa, sauce, and spices. 4. Spoon mixture evenly into peppers. Bake for about 20 minutes. 5.
