1 - 14.5 oz can diced tomatoes, drained
1 T. tomato paste
Italian seasoning to taste

Here is how you make Stuffed Peppers with Turkey and Vegetables:

Preheat oven to 350. Wrap red peppers in aluminum foil, and place in a baking dish. Bake 15 minutes in the preheated oven. Remove.In a skillet over medium heat, cook the turkey until evenly brown. Set aside. Heat oil in the skillet and cook onion, mushrooms, zucchini, red bell pepper, yellow bell pepper and spinach until tender. Return turkey to skillet. Mix in the tomatoes and tomato paste and season to taste. Stuff peppers with turkey mixture.Return peppers to oven and cook another 15 minutes.
