Preheat oven to 350 degrees. Pound turkey breasts to 1/4 inch thickness. Prepare stuffing: Boil 1/3 cup water with 2 tbsp butter and add dry stuffing mix; stir until moist and set aside. Heat 1 tbsp olive oil over medium heat and add carrots, mushrooms, garlic, onions, and ham. Saute until mushrooms soft and onions translucent. Stir in hot sauce and chopped roasted peppers.
