Preheat oven to 350Prepare Quinoa (1.5c of boiling water to 1c of quinoa), set asideBrown ground turkey. Drain. Add tomato sauce, return to heat. Simmer for 10-15 minutesCut tops off peppers. You can parboil them to get a more tender pepper, but I find that the 20-25 min in the oven is enough to get that softened, but not mushy texture. Fill the peppers with the ground turkey and sauce mixture, about 3/4 fullTop off with quinoa, a dollop of sauce, and cheesePlace in oven. Cook 20-25 minutes, until desired tenderness is achieved.
