1 small onion, finely diced
1 large carrot, shredded (or finely diced)
2 med stalks of celery, finely diced
1 tsp olive oil
Salt and pepper to taste
5 cloves of garlic, minced
15 oz can of "petite cut olive oil and garlic" tomatoes
28 oz can of crushed tomatoes
1 tbsp sugar, to taste
1 tbsp oregano, dried
1 tbsp basil, dried (fresh is better as a garnish!)
1 tsp marjoram, dried
1 tsp thyme, dried
1 tsp rosemary, dried, crushed or chopped
2 bay leaves

Sub the herbs with 3 tbsp Italian herb mix...I have a whole lot of herbs kicking around but the mix is good too!

Spaghetti squash... I think mine weighed about 6 lbs and was quite large.

You know it is cooked when the flesh is tender and is easily turned to strands when scraped with a fork. Season as desired with salt, pepper, butter or margarine, garlic.3. Taste sauce and adjust seasonings as required. Add sugar if it is too acidic.4.
