1/2 bell pepper of your choice fine diced or rough shredded (I used an orange pepper)
1 medium onion rough shredded or fine diced

4 tsp coconut oil or oil of your choice, divided in half

16 oz or 1lb ground turkey, 93% lean

6 tsp or 2 TBSP taco seasoning (I make my own but you can use store bought

2 TBSP cumin

4 tsp garlic fresh diced or dehydrated, divided in half

1 14.5 oz can of Happy Harvest Salsa Style Fire Roasted Tomatoes, diced in puree (from Aldi's or similar style)

Here is how you make Turkey and Veggie Mexi filling:

Cook turkey in a non-stick pan with 2 tsp oil until no longer pink. When almost done, season with 2TBSP taco seasoning, 2 TBSP cumin and 2 tsp garlic. Mix well to evenly distribute spices. Transfer turkey out of pan and set aside. Add remaining 2 tsp of oil into pan and cook carrots, peppers and onions until soft. Add can of fire roasted tomatoes. Add remaining 2TBSP taco seasoning and 2 tsp garlic to veggie mixture. Add turkey back into pan with veggies.
