Cut sweet potatoes into small (about 1") cubes. Spray roasting pan with cooking spray and roast at 400 for about 5-10 minutesChop shallots and garlic and add to ground turkey. Add tuscan seasonings. Brown turkey. Chop carrots, tomatoes, mushrooms, pepper. Add browned turkey and veggies to sweet potatoes and cook for 20 minutes or until sweet potatoes are tender.
