Chop bottom inch off of lettuce and soak in cold water for ~5 min to crisp up. Dice vegetables. In a large pan (non-stick works best) cook onions, carrots and garlic together with salt and pepper on med/high heat covered until onions are mostly translucent. Stir occasionally. Add ground turkey, mushrooms and bell peppers stirring so that turkey begins to get evenly browned. Add rest of ingredients and cook thoroughly on med/high heat. Fill leaves with about 3-5 tablespoons of turkey/veggie mix. Top with a little Sriracha for a kick.
